Quick cauliflower soup

Ingredients for 2 servings:

  • 750 g cauliflower, frozen or fresh
  • 1 pack of lean ham cubes
  • 100 ml natural yogurt, 0.1%
  • n. B. Spice(s) (parsley, garlic, pepper…)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

with natural yogurt

First, cook the cauliflower until it’s soft enough to shred. Then, reserve the cauliflower water and puree it with the yogurt. The consistency will initially be more like a porridge, so keep adding more cauliflower water. You can, of course, use regular water, but why not put those washed-out vitamins to good use? Keep going until the consistency is just right for you. Add the ham cubes and simmer. Add any seasonings you like, if desired.
