Quick dough for sweet and savory pastries, e.g. quiche or tart

Ingredients for 1 servings:

  • 100 g butter
  • 2 tbsp milk, low-fat cold
  • 1 egg(s)
  • 75 g sugar (for the sweet version)
  • 220 g flour
  • ½ tsp salt
  • ½ tsp baking powder

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

For a round baking sheet (26-28 cm in diameter): Melt the butter in a pan over low heat, then remove the pan from the heat. Whisk together the milk and egg, add to the melted butter, and mix (for a sweeter batter, add the sugar). Mix the flour with the salt and baking powder. Now add this flour mixture to the warm butter mixture. Quickly mix until you have a smooth batter. Chill the batter for at least 1/2 hour. Then top with your favorite toppings and bake. I think this batter is a good alternative to “ready-made batter from the refrigerated counter,” and you know what’s in it. I’ve also defatted this batter and made it with WW semi-skimmed margarine (which is also suitable for baking): the batter turned out really crispy, and you could (almost) not taste the difference.
