Ingredients for 1 servings:

  • 1 cube of fresh yeast or 2 packets of dry yeast
  • 250 g wholemeal spelt flour
  • 250 g whole wheat flour
  • 75 g sunflower seeds
  • 75 g sesame seeds
  • 10 g salt
  • 2 tbsp vinegar or lemon juice
  • 450 ml water, lukewarm

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 20 minutes

Dissolve the yeast in lukewarm water. Mix together the wholemeal spelt flour, wholemeal wheat flour, sunflower seeds, sesame seeds, and salt. Pour the yeast water and vinegar into the flour mixture all at once and knead thoroughly. Transfer the resulting dough to a greased loaf pan, sprinkle the surface with the remaining seeds, and press down lightly. Place in a cold oven and bake at 200°C (top/bottom heat) for about 60 minutes. Remove the bread from the loaf pan, return it to the oven, and bake for about 10 minutes using the residual heat of the turned-off oven. Let cool. Sunflower seeds and sesame seeds can be substituted with other seeds of the same consistency and volume.
