Quick satay sauce

Ingredients for 1 servings:

  • 2 small garlic cloves, finely chopped
  • 1 tsp coconut oil or sesame oil
  • 1 tsp lime juice, alternatively lemon juice
  • 1 can coconut milk, approx. 400 ml
  • 1 tsp ginger, grated
  • 3 tbsp soy sauce, dark
  • ½ cube of organic chicken broth
  • 250 g peanut butter (peanut butter), organic, unsweetened
  • cane sugar
  • Cayenne pepper or chili flakes or sambal oelek, depending on the desired spiciness

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

With peanut butter and coconut milk

Sauté the finely chopped garlic cloves in coconut or sesame oil, but do not allow them to brown. Deglaze with the coconut milk and heat gently over low heat. Add all the other ingredients except the sugar, cayenne pepper, chili flakes, or sambal oelek. You can use a little more or less ginger, depending on how spicy you like it. Melt the peanut butter well in the sauce, stirring frequently with a whisk. Season to taste with a little brown sugar, soy sauce, cayenne pepper, chili flakes, or sambal oelek. If the sauce is too runny, reduce it slightly over low heat. It goes perfectly with chicken skewers or meatballs.
