Quick spaghetti salad

Ingredients for 4 servings:

  • 250 g spaghetti, broken into small pieces
  • Salt
  • 100 g peas (frozen)
  • 1 tbsp oil
  • 2 tbsp vinegar (wine vinegar)
  • 100 g cheese (Gouda), sliced
  • 1 can corn kernels
  • 2 gherkins
  • 5 tbsp cucumber juice
  • 1 bell pepper(s), red
  • 6 tbsp mayonnaise
  • 150 g natural yogurt
  • 100 g ham, cooked
  • possibly chopped peppers for garnishing
  • parsley for garnishing
  • Pepper, white
  • 1 pinch(s) of sugar

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

to serve in just over an hour

Cook the pasta according to the package instructions until al dente. Add the frozen peas for the last 3 minutes and cook. Drain and toss in a bowl with the vinegar and oil. Cut the cheese into sticks, dice the cooked ham, and drain the corn. Quarter the gherkins lengthwise and cut into fairly small pieces. Clean the bell pepper and cut into small pieces. Stir everything into the spaghetti. Mix together the mayonnaise, yogurt, and pickle juice and season with salt, pepper, and a pinch of sugar. Stir into the spaghetti and let stand for about 30 minutes before serving. Garnish with parsley and bell pepper pieces, if desired.
