Ingredients for 4 servings:

  • 1 large quince(s)
  • 500 ml milk
  • 4 tbsp cornstarch
  • 100 g sugar
  • 1 packet of vanilla sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Peel the quince, remove the core, and cut the flesh into pieces. Cook in a saucepan with as little water as possible until soft. Once softened, mash or puree the quince, depending on whether you prefer a chunky or smooth texture. Mix the cornstarch with a little cold milk, then bring the remaining milk to a boil with the sugar and vanilla sugar. Remove the milk from the heat and whisk in the cornstarch. When the mixture begins to thicken, stir in the quince purée. Ladle the pudding into bowls and let it cool.
