Quinoa and carrot patties

Ingredients for 2 servings:

  • 150g quinoa
  • 120 g carrot(s)
  • 1 large onion(s)
  • 3 garlic cloves
  • 2 small eggs
  • 60 g potato flour
  • 3 tbsp chives
  • 1 tsp mustard
  • 1 tsp, leveled pepper
  • ½ tsp salt
  • Oil for frying

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour

Prepare the quinoa according to the package instructions. Then let it cool in the pan. Meanwhile, grate the carrots and finely chop the onion and garlic. Combine all ingredients in a bowl and mix well. The mixture should be pliable (but slightly sticky). With wet hands, form small, flat patties. This amount makes about 15 patties. Heat a nonstick pan with oil. Place the patties in the pan and cook on both sides over medium heat. They should release naturally.
