Ingredients for 1 servings:
- 50 g quinoa
- 100 ml coconut milk
- 100 ml water
- 1 tbsp maple syrup
- ½ tsp cinnamon powder
- some vanilla pod(s), the pulp of it
- 1 pinch of salt
Instructions
Working time approx. 10 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Rinse the quinoa thoroughly with hot water and drain briefly. Then place it in a saucepan and add the remaining ingredients, stirring well. Simmer for about 15-20 minutes, then let it stand for another 5 minutes. Chilling the pudding will firm up a bit, but it’s still delicious warm. If you like, you can garnish it with cinnamon and some coconut flakes. Tip: Regular milk can be used instead of coconut milk.
