Quinoa Spinach Patties

Ingredients for 2 servings:

  • 1 point leaf spinach, frozen
  • 1 cup quinoa
  • 2 cups water
  • 2 eggs
  • breadcrumbs
  • Flour
  • salt and pepper
  • oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Thaw the spinach. Rinse the quinoa in hot water, then boil it in 2 cups of lightly salted water. Add the spinach and mix with the breadcrumbs, flour, and eggs until a semi-solid mixture forms, easily forming patties. Season with salt and pepper. Fry in plenty of oil.
