Raclette Bacon Bomb

Ingredients for 4 servings:

  • 600 g potatoes
  • 200g bacon
  • 100 g raclette cheese
  • 1 bunch of parsley
  • some milk
  • some butter
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Cook the potatoes until tender. In the meantime, finely chop the parsley and arrange the bacon on cling film to form a rectangular, closed surface. Mash the cooked potatoes with a little milk and the chopped parsley, and season with salt and pepper. The texture should still be a bit dry. Form a “bar” of mashed potatoes in the center of the laid-out bacon slices and press a groove lengthwise into it with a wooden spoon. Place strips of raclette cheese into this groove and cover the top with more mashed potatoes. First, fold in the short sides of the bacon slices, then fold in the long sides with the film. Bake everything in a hot oven at approximately 180°C (top/bottom heat) for approximately 15-30 minutes, until the bacon is browned. If you double the amount of cheese, the raclette bacon bomb makes a complete main course with a salad.
