Radicchio salad with orange

Ingredients for 4 servings:

  • 600 g Radicchio di Treviso, alternatively regular radicchio
  • 100 g walnuts
  • 4 tbsp extra virgin olive oil
  • 2 tbsp Aceto balsamico, vegan
  • salt and pepper
  • 2 oranges

Instructions

Working time approx. 15 minutes; Rest time approx. 5 minutes; Total time approx. 20 minutes

Wash the radicchio and cut into thin strips. Roughly chop the walnuts. Let the radicchio sit in a bowl with olive oil, balsamic vinegar, salt, and pepper for five minutes. Fillet the oranges and cut into small pieces. Add half of the nuts and the orange segments and gently fold in. Arrange the salad in the center of the plate and garnish with orange and walnut pieces.
