Radish salad with peanuts

Ingredients for 1 servings:

  • 1 bunch of radishes
  • 2 tsp sugar
  • ½ tsp salt
  • 2 tbsp Balsamic vinegar, dark
  • 2 tbsp soy sauce
  • 1 tsp sesame oil, roasted
  • 2 spring onions
  • ½ handful of peanuts, roasted
  • e.g. coriander
  • e.g. parsley
  • n. B. Pfeffer

Instructions

Working time approx. 15 minutes; Rest time approx. 45 minutes; Total time approx. 1 hour

Wash and trim the radishes, roughly chop them, and place them in a bowl. Add the salt and sugar and mix with the radishes. Let them stand for 10-15 minutes. In the meantime, roughly chop the coriander and parsley. Slice the spring onions into rings. Roughly chop the peanuts. Salted, roasted peanuts can be lightly rubbed with kitchen paper to remove some of the salt. Add the soy sauce, balsamic vinegar, and sesame oil to the radishes (don’t discard the liquid!), add all the chopped herbs, and the roasted peanuts, and season with pepper. Let stand for about 30 minutes.
