Raspberry – Fool a la Mimi

Ingredients for 8 servings:

  • 400 g biscuits (amaretti biscuits)
  • 750 g low-fat curd cheese
  • 4 cups vanilla powder
  • some sweetener or sugar
  • possibly flavoring (vanilla flavor)
  • 1 kg raspberries, fresh or frozen
  • some wine (raspberry wine), possibly

Working time approx. 20 minutes; Total time approx. 20 minutes

Raspberry quark dessert

Crush the amaretti biscuits into crumbs in a plastic bag. If you want to garnish, reserve some amaretti biscuits and raspberries. Mix the low-fat quark with the vanilla pudding until creamy. Sweeten to taste. If you like a hint of vanilla, you can add a little vanilla essence. Set aside. Mix the thawed frozen raspberries with sugar and then puree. You can then season the raspberry puree with raspberry wine to taste. Now layer the mixture, either in glasses or in a large glass bowl. First, add a layer of amaretti biscuits, then a layer of the quark and pudding mixture, and then the raspberry puree. Repeat this process until all the ingredients are used up. Garnish the glasses or bowl beautifully, and you’re done.
