Raspberry meringue

Ingredients for 6 servings:

  • 2 pt. meringue(s) (meringue drops, pastries)
  • 2 pts. raspberries (frozen)
  • 800 ml cream
  • 2 packets of vanilla sugar
  • 2 tbsp lemon juice

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Place the meringue drops in a tall bowl. Sprinkle the raspberries on top and let them thaw. Blend with a hand blender or masher until small meringue pieces remain. Sprinkle with 2-3 tablespoons of lemon juice and mix well. Before serving, whip the cream with the vanilla sugar until creamy, but not stiff. Then pour over the raspberry meringue mixture and blend again until the cream turns pink. Serve slightly chilled.
