Raw white cabbage salad

Ingredients for 8 servings:

  • 1 kg white cabbage
  • 1 onion(s)
  • salt and pepper
  • Balsamic vinegar, white
  • Caraway seeds
  • Oil (sunflower or rapeseed oil)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely grate the white cabbage, sprinkle with salt, and knead with both hands until the juices run and the cabbage is moist. Season with pepper, add caraway seeds (or powder), diced onions, vinegar to taste, and plenty of oil. This raw coleslaw can be modified to your liking, for example, by mixing in 2-3 raw finely grated carrots or strips of red or green bell pepper. We like it best with breaded feta cheese and small meatballs. It also tastes delicious with roast pork and helps digest fat.
