Red cabbage grandma's style

Ingredients for 4 servings:

  • 1 kg red cabbage, very finely sliced
  • 60 g goose fat
  • 1 large onion(s), diced
  • 1 bay leaf
  • some cloves
  • some salt
  • some sugar
  • wine vinegar
  • 125 ml water, hot
  • 3 sour apples, possibly 4 apples, peeled, pitted, chopped
  • 1 tbsp currant jelly
  • 1 tsp cornstarch
  • 1 tbsp water, cold, for mixing

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours

Heat the lard in a large pot, fry the onion until light yellow, add the red cabbage, and heat briefly. Add the bay leaf, cloves, salt, sugar, 1 tablespoon of vinegar, water, apples, and blackcurrant jelly. Cover and simmer over low heat for 1 to 1.5 hours until tender. Then thicken with cornstarch and season with salt, sugar, and vinegar.
