Ingredients for 4 servings:
- 1 tbsp clarified butter
- 1 onion(s), chopped
- 1 apple, e.g. Boskoop, finely diced
- 1 tbsp sugar
- 3 tbsp balsamic vinegar
- 100 ml freshly squeezed orange juice
- 100 ml vegetable stock
- 100 g cranberries
- 1 jar red cabbage, drained
- Salt
- pepper
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes

Render the fat, sauté the onion and apple. Sprinkle with sugar and let it caramelize. Add the balsamic vinegar, orange juice, vegetable stock, and cranberries, and sauté for 15 minutes. Add the red cabbage and heat through. Season to taste.
