Red cheese soup

Ingredients for 4 servings:

  • 500 g minced meat
  • 2 tbsp olive oil
  • 2 onions, finely chopped
  • 2 red bell peppers, diced
  • 2 yellow bell peppers, diced
  • 2 cans of corn
  • 2 cups of processed cheese with herbs
  • 2 cups cream cheese spread
  • 2 cups sour cream
  • 2 tsp salt
  • 2 tbsp sugar, maybe a little more
  • 3 packs of tomatoes, pureed

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Cheese soup

Brown the minced meat in oil until crisp (preferably all of it in a large pot). Then add the finely diced bell peppers and fry briefly. Next, add the finely chopped onions and fry until translucent. Then add the pureed tomatoes and let it simmer briefly. Now add the corn and immediately stir in the processed cheese and sour cream until no lumps remain. Then let the whole thing boil again briefly and finally season with salt and sugar. The soup tastes best when it has been cooled and then reheated.
