Strip the currants from the stems. Place them in a saucepan with a little sugar (to taste) and bring to a boil briefly until they burst. Purée them with a hand blender and then pass them through a sieve to remove the seeds. Mix the vanilla pudding powder with a little cold water. Bring the juice to a boil briefly and thicken slightly with the vanilla pudding powder. It shouldn’t be too thick and should have the consistency of syrup. If it’s too thick, add a little water if necessary. Stone or chop the remaining fruit and place it in a bowl. Pour the thickened currant juice over it while it’s still hot. Tip: If you’re in a hurry, you can also slightly thicken ready-made currant juice, although it tastes better with fresh. Tastes great with ice cream or with vanilla sauce or yogurt.
