Ingredients for 6 servings:

  • 1 pack of ladyfingers
  • 500 g red fruit compote
  • 3 tbsp cherry brandy
  • 250 g mascarpone
  • 300 g yogurt (3.5% fat)
  • 2 tbsp powdered sugar

Place the sponge fingers in a baking dish, covering the entire bottom (I had a few leftovers). Mix the ready-made red fruit compote from the supermarket with 3 tablespoons of cherry brandy, stir well, and pour over the sponge fingers. Whisk the mascarpone with yogurt and 2-3 tablespoons of powdered sugar (depending on how sweet you want it) until creamy. Spread this cream on the sponge fingers. Cover everything with plastic wrap or a lid and refrigerate overnight. This will allow the sponge fingers to set and become nice and soft. Theoretically, this will keep for 3-4 days if kept cool.
