Red lentil soup

Ingredients for 4 servings:

  • 75 g lentils, red
  • 500 ml water
  • 1 onion(s)
  • ½ tbsp tomato paste
  • 1 tbsp oil
  • Salt
  • pepper
  • possibly mint

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Turkish

Wash the lentils once or twice (important). Finely dice the onion and lightly roast it in oil, then add tomato paste. Add the washed lentils and stir a few times. Add water and bring to a boil. Remove from the heat, add salt and pepper, and blend thoroughly with a hand blender. Then let it simmer for another 15-20 minutes. If desired, you can lightly roast 1 tablespoon of finely chopped mint leaves in oil and add them to the soup when serving.
