Red wine muffins

Ingredients for 1 servings:

  • 250 g flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • 3 tbsp cocoa powder
  • 100 g dark chocolate, finely chopped
  • 80 g almonds, chopped
  • 2 eggs
  • 1 pinch of salt
  • 150 g brown sugar
  • 1 packet of vanilla sugar
  • 100 ml oil (sunflower oil)
  • 1 tbsp rum
  • 125 ml red wine
  • 150 g buttermilk
  • possibly powdered sugar or chocolate coating for coating

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Combine the dry ingredients (flour to almonds). In a mixing bowl, thoroughly combine the remaining ingredients. Add the flour mixture and stir briefly. Divide the batter into greased muffin tins and bake at 170°C on the middle rack for 20-25 minutes. Once cooled, top with red wine icing or dark chocolate coating, if desired.
