Rhubarb – Honey

Ingredients for 1 servings:

  • 1 kg rhubarb
  • 1 kg sugar
  • 1 packet of vanilla sugar or 1 vanilla pod
  • 1 pinch of salt

Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes

Delicious for breakfast rolls or for a quark dish

Clean the rhubarb as usual, weigh out 1 kg, chop it finely, wash it, and drain well. Then place it in a saucepan and add the sugar, vanilla sugar, and a small pinch of salt. Mix everything well and let it stand for about 1 hour until it has liquidized. Now heat it, stirring constantly, and simmer until the rhubarb pieces break down, the sugar thickens, and the mixture turns brown. This takes about half an hour. Don’t forget to stir. Pour the hot mixture into small jars and immediately screw on the lids. Once cooled, the rhubarb honey is ready to use: on a breakfast roll or in a quark dish, for example. By the way, even those who don’t like rhubarb will love it!
