Rhubarb vinaigrette

Ingredients for 4 servings:

  • 2 orange(s), the juice
  • 1 tsp sugar
  • ¼ tsp ginger, grated
  • 1 stalk(s) rhubarb
  • 1 tbsp white wine vinegar
  • 3 tbsp oil
  • Salt
  • pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

goes perfectly with slightly bitter salads

Boil the orange juice with the sugar and ginger until reduced by two-thirds. Slice or grate the rhubarb into very thin slices. Add to the orange juice and bring back to a boil. The rhubarb slices should break down slightly. Stir in the vinegar and oil and season with salt and pepper. Tastes especially good with chicory and other bitter greens.
