Making the syrup begins in the summer and takes several weeks. The advantage of this method is that the many beneficial ingredients are largely preserved and are not overcooked like with boiling. Take a large, boiled, sealable jar and add a layer of 2 cm of chopped ribwort plantain leaves to the bottom. Cover the leaves with sugar until no leaves are visible. The leaves and sugar will settle. The next day, add another layer of leaves and sugar. Repeat this process until the jar is full. Now, tightly closed, store the jar for at least 2 months in a dark, evenly tempered cellar, or, if possible, bury it (the hole must be at least 1/2 meter deep) to ensure optimal fermentation conditions. After this time, heat the contents of the jar to 70°C if necessary to kill any germs. Filter through a cloth and pour into dark bottles. The syrup will keep for about a year if tightly closed and kept cool. It is very effective for coughs and is also enjoyed by children.
