Rice salad with salami and peppers

Ingredients for 8 servings:

  • 500 g rice
  • 200g salami
  • 3 bell peppers, red, yellow and green
  • 2 onions
  • 2 tbsp balsamic vinegar, light
  • 2 tbsp oil
  • 1 tbsp vinegar
  • salt and pepper
  • n. B. spice(s)
  • n. B. Pickled gherkin(s)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the rice as usual until it’s tender and let it cool. Dice the salami, peppers, and onions. Place everything in a bowl, mix, and season with vinegar, oil, and spices. You can also mix in some finely chopped gherkins, and if you don’t have balsamic vinegar, the salad also tastes great with some of the gherkin juice.
