Roasted apricots with honey, olive oil and lavender sauce

Ingredients for 4 servings:

  • 10 apricots
  • 30 ml olive oil
  • 3 ½ tbsp acacia honey
  • 100 g crème fraîche
  • 2 sprigs lavender, fresh or dried
  • 3 tbsp pine nuts

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Roast the pine nuts in a pan without fat. Wash, halve, and pit the apricots. Add the olive oil and honey to a pan and heat gently. Place the apricots cut-side down in the pan and roast slowly. Meanwhile, add the lavender (careful: don’t use too much, otherwise it will only taste like lavender!). Arrange the apricots on a plate and divide the crème fraîche between the plates. Sprinkle with the pine nuts and drizzle with the apricot juice. Serve immediately.
