Ingredients for 2 servings:
- 1 ½ kg spare ribs (ribs)
- 4 tsp, leveled sea salt
- 2 tsp, leveled allspice
- 5 tbsp olive oil
- 3 tbsp vinegar
- 3 tbsp soy sauce
- 4 tbsp, leveled brown cane sugar
- 6 tbsp pineapple juice
- 1 tsp, leveled cinnamon powder
- ½ tsp cayenne pepper
- 2 slice(s) pineapple, from the can
- 2 tsp, levelled black pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes
Cut the spare ribs into individual ribs, leaving some meat on each rib. Combine the sea salt, allspice, cayenne pepper, and black pepper in a mortar and pestle and sprinkle evenly over the ribs. Roast the spare ribs in olive oil in a pan until crispy brown on all sides. Add the vinegar, soy sauce, and brown sugar. Caramelize the sugar in the pan. Add the pineapple juice and finely chopped pineapple slices. Let stand for another 5 minutes.
