Ingredients for 4 servings:
- 4 pieces of chicken, e.g. chicken legs
- 4 beetroot
- 4 large potatoes or sweet potatoes
- 400 ml vegetable stock
- lemon juice
- Paprika powder, sweet
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes
Oven-baked chicken with beetroot and potatoes
Preheat oven to 200°C. Rub the chicken pieces with lemon juice, paprika, salt, and pepper. Peel the potatoes and beets and cut into pieces. Place the vegetables in a large casserole dish and season with salt. Place the chicken pieces on top. Place in the oven at 200°C for 20 minutes. Add hot vegetable stock and continue cooking in the oven for about another 20 minutes.
