Rocket Salad with Green Asparagus and Chilli

  • 4 Pc. Eggs
  • 150 g Asparagus green fresh
  • 300 g Arugula
  • 100 g Cucumber
  • 125 g Mozzarella minis
  • 100 g Cherry date tomatoes
  • 1 Pc. Chilli red fresh
  • 5 tbsp Balsamic vinegar pink
  • 8 tbsp Olive oil
  • 1 tsp Capers
  • Salt and pepper
  • Sugar
  1. Boil the eggs hard for about 5 minutes. Wash the green asparagus, cut off the woody ends, cut the asparagus into 3 cm long pieces. Blanch in boiling water for 3-4 minutes. Wash the rocket, pat dry. Wash the cucumber and Cut into small pieces. Wash tomatoes, cut in half. Rinse the eggs, peel them and cut them into large pieces. Wash the chilli, cut in half and remove the seeds, cut the chilli into small pieces. For the dressing: mix the balsamic vinegar with the olive oil, salt, pepper and sugar, and finally add the capers. Arrange the salad on plates and serve with the dressing.
