Rocky Road Brownies

Ingredients for 1 servings:

  • 100 g flour
  • 3 eggs
  • 180 g butter
  • 150 g sugar (up to 200 g if you like it sweeter)
  • 80 g dark chocolate
  • 30 g cocoa powder, unsweetened
  • 1 pinch of salt
  • ½ vanilla pod(s) or 1 packet of vanilla sugar
  • 100 g almonds
  • 200 g hazelnuts and walnuts
  • 50 g pistachios, salted
  • 25 g mini marshmallows
  • 40 g chocolate drops for baking

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

For the brownies, beat the sugar and eggs in a bowl until fluffy. Meanwhile, melt the chocolate and butter in a bowl over a pan of simmering water. Then add the chocolate-butter mixture to the sugar-egg mixture and mix well. Add the flour, cocoa powder, a pinch of salt, and the seeds of half a vanilla pod or a sachet of vanilla sugar and mix well. Pour into a brownie pan lined with baking paper or a shallow baking dish and bake in an oven preheated to 180°C for about 20 minutes. Roughly chop the pistachios, almonds, hazelnuts, and walnuts and sprinkle over the brownie along with the mini marshmallows and chocolate chips. Return the brownie to the oven for another 8-10 minutes, until the marshmallows are nicely browned and the chocolate chips have melted. Let the brownie cool and cut into pieces.
