Rolled Turkey Roast Filled with Ham Quark and Vegetables

The perfect rolled turkey roast filled with ham quark and vegetables recipe with a picture and simple step-by-step instructions.

for the filling

  • 2 tbsp Dijon mustard
  • 150 g Bacon
  • 250 g Quark lean
  • 1 piece Organic egg
  • 2 tbsp Breadcrumbs
  • 2 piece Spring onion
  • 1 piece Paprika

further ingredients

  • 3 tbsp Vegetable oil
  • 1 piece Onion
  • 400 g Carrots
  • 100 g Celery bulb
  • 1 piece Clove of garlic
  • 400 ml Chicken broth
  • 150 ml Cream
  • Salt and pepper
  • Parsley for garnish

Preparing the filling

  1. Peel off the spring onions, wash and cut into small pieces. Wash, clean and core the peppers and cut into very small cubes. Mix the quark with the egg and breadcrumbs until smooth. Fold in the paprika and spring onion and season with salt and pepper.

Preparation of the turkey roll roast

  1. Wash the turkey breast (preferably have the butcher cut into a flat, rectangular piece) and pat dry thoroughly.
  2. Place the meat slice flat on the work surface, brush with Dijon mustard, cover with the ham slices and spread the quark and vegetable mixture on the ham, leaving one edge free.
  3. Roll up the meat from the long side and wrap it tightly with kitchen twine.
  4. Peel the onion and chop roughly. Clean the carrots and celery and cut into pieces, peel and chop the garlic.
  5. Heat the oil and fry the turkey roast vigorously on all sides, remove it, place it in a suitable roasting pan, season with salt and pepper.
  6. Briefly fry the vegetables and garlic in the remaining oil and distribute them in the roasting pan. Pour in the chicken broth and cook in the preheated oven at 180 degrees for one hour. Occasionally pour the gravy over them.
  7. Take the turkey roast out of the roasting pan, remove the kitchen thread, wrap in aluminum foil and keep warm.
  8. For the sauce, put the cooked vegetables, including the gravy, in a saucepan, add the cream and puree. Season to taste with salt and pepper and bring to the boil.

Serving

  1. Place a sauce mirror on the preheated plate. Wrap the turkey roll out of the foil, cut into slices and place on top. Sprinkle with finely chopped parsley. Herbal rice, boiled potatoes or parsley potatoes and bread go well as a side dish.
