Kolatschen made from puff pastry, filled with quark

Combine the curd cheese, one egg, sugar, vanilla sugar, and the juice and finely grated zest of half a lemon. Cut each sheet of puff pastry into 6 equal squares, place approximately 1 1/2 tablespoons of filling in the center of each square, and fold in the four corners like a golatsche (a traditional German goulash). Brush with egg and bake in a preheated oven at 200°C for 30-40 minutes. They taste delicious both hot and cold; they can be served lukewarm with fresh berries. This pastry is also perfect for taking on the go.
