Rustic shashlik sauce

Ingredients for 10 servings:

  • 1 red bell pepper(s)
  • 100 g bacon (pork belly bacon)
  • 50 g bacon, fat from pork
  • 2 onions
  • 300 ml meat broth
  • 500 ml ketchup, (curry ketchup)
  • 1 can of tomato paste
  • Salt
  • black pepper
  • Paprika powder, hot
  • Paprika powder, sweet
  • curry

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely dice the onions, bell peppers, and bacon. Fry the fatty bacon and sear the belly bacon and onions in it. Add the bell peppers. Add the tomato paste and simmer until dark brown. Deglaze with the stock and add the ketchup. Season to taste and simmer covered for a while (I usually leave it on the heat for 2-3 hours). Finally, blend until smooth. The longer the sauce simmers, the better it tastes. It tastes even better reheated.
