SABO's apple soup with bratwurst

Ingredients for 4 servings:

  • 1 vegetable onion(s)
  • 3 apples
  • 3 pieces of bratwurst, raw
  • 1 liter of broth
  • ½ tsp salt
  • 2 tsp paprika powder
  • ¼ tsp cayenne pepper
  • 3 tbsp thyme
  • 200 g sour cream
  • 4 slices of farmhouse bread
  • 120 g mountain cheese, grated
  • oil

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Sear the sausages in hot oil for about 1-2 minutes on each side and remove. Dice the onions and apples and sauté in the same frying fat for 3-4 minutes. Cut the sausages into pieces and add them back in. Sprinkle with paprika. Pour in the broth. Bring to a boil and simmer over medium heat for about 10-12 minutes. Season with salt and cayenne pepper. Chop the thyme. Stir in the thyme and sour cream and remove from the heat. Lightly toast the farmhouse bread. Divide the soup among four ovenproof mugs. Place the bread slices on top of the soup and sprinkle with cheese. Bake at 200°C for about 5-7 minutes.
