Ingredients for 5 servings:
- 700 g minced pork
- 300 g minced beef
- 2 tbsp butter
- 1 carrot(s)
- 1 onion(s) (vegetable onion)
- 120 g celeriac
- 2 tsp mustard
- 100 g honey
- 2 chili peppers, Habaneros chilies
- 300 ml pineapple juice
- Salt
- pepper
- 2 eggs
- 4 tbsp breadcrumbs
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Finely chop the onion and finely dice the carrots and celery. Melt the butter and sauté the vegetables until soft. Remove from the heat, let cool, and knead with the ground pork and beef, mustard, eggs, and breadcrumbs. Season with salt and pepper, and form into a flatbread. Place the flatbread on a baking sheet and bake at 180°C (350°F) for about 40-45 minutes. Meanwhile, slowly bring the pineapple juice and honey to a boil. Add the chopped habi’s and simmer over low heat for another 10-12 minutes. After 20 minutes, brush the meatloaf with the honey glaze and finish cooking.
