Sage potato gratin with Parmesan

Ingredients for 2 servings:

  • 500 g potatoes, floury, peeled, sliced
  • 20 g butter
  • Sage leaves, depending on size 12 – 25 pieces
  • 3 garlic cloves, chopped
  • 250 ml chicken stock
  • 150 ml cream, possibly soy cream
  • e.g. Parmesan, sliced
  • e.g. sour cream, a few tsp
  • salt and pepper
  • Chili pepper(s), dried, ground

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 40 minutes

Lightly salt the potato slices and arrange them in a gratin dish. Heat the butter and sauté the garlic and sage pieces. Pour in the broth and cream, season with plenty of pepper and a little chili. Bring to a boil. Toss the potato slices with the sauce. Grate the Parmesan cheese over the top and scatter the sour cream flakes on top. Bake in the oven on the second rack from the top at 200°C for 50 minutes. Then bake for another 15 minutes at 180°C.
