Salads: Bean Salad from Aosta Valley

  • 250 g White beans, dried
  • 2 piece Spring onions fresh
  • 10 leaves Sage fresh
  • 1 tablespoon Balsamic vinegar, white
  • 2 tablespoon Extra virgin olive oil
  • 1 teaspoon Sugar
  • Salt and pepper
  1. Soak the beans overnight. Discard the soaking water and boil the beans until soft and drain.
  2. Clean the spring onion and cut into fine rings, coarsely chop the sage.
  3. Make a marinade from vinegar, oil, sugar, salt and pepper and pour it over the beans. Stir in the onion rings and sage and let steep for three hours.
