Salmon and Vegetable Packet

The perfect salmon and vegetable packet recipe with a picture and simple step-by-step instructions.

  • 4 Frozen salmon fillet
  • 2 Red Onions
  • 1 middle Zucchini
  • 6 Cocktail vine tomatoes
  • 2 Garlic cloves
  • 8 Tomatoes dried in oil
  • 8 Basil
  • Olive oil
  • Salt
  • Pepper
  1. Thaw the salmon fillet, wash, pat dry and season with salt and pepper.
  2. Peel the onion, wash the zucchini, halve both and cut into slices.
  3. Cut the tomatoes, sun-dried tomatoes and the peeled garlic into small cubes and place in a bowl.
  4. Wash the basil, shake dry, cut into strips and add to the tomatoes with a little olive oil and mix everything well.
  5. Now brush a piece of aluminum foil in the middle with a little oil, spread a few onion and zucchini slices on top.
  6. Place a slice of salmon on top and pour some of the tomato mixture over it, season with salt and pepper
  7. Put the whole thing together at the top so that a closed package is created.
  8. Put the packets in the 180c. Oven for about 15 minutes
  9. Now take the packet out of the oven, let it rest a little and then carefully open it – hot –
  10. Put the fish with the vegetables on the plate, garnish with a lemon and serve with a little mashed potatoes – enjoy your meal; 🙂
