Salmon fillet in almond-herb crust

Ingredients for 4 servings:

  • 4 salmon fillets, approx. 120 g each
  • salt and pepper
  • some coriander powder
  • some lemon juice
  • some flour, grippy
  • 100 g butter
  • 60 g breadcrumbs
  • 60 g ground almonds
  • 2 garlic cloves
  • 1 tbsp parsley, chopped

Instructions

Working time approx. 15 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Warm the butter slightly until it softens and is easier to work with. Then mix it with the breadcrumbs, ground almonds, finely chopped garlic, and chopped parsley, season, and chill for at least 10 minutes. In the meantime, season the salmon with salt, pepper, and coriander, drizzle with lemon juice, and flour both sides. Sear the fillets over high heat until golden brown on both sides, then spread the cold crust mixture (not too thinly). Bake in a preheated oven at 220°C for 5 minutes, leaving the oven door open for a short while. We served it with rice and a lime cream sauce.
