Salmon on pea puree

Ingredients for 1 servings:

  • 180 g salmon, fresh, with skin
  • 200 g peas, frozen
  • salt water
  • 12 mint leaves (large leaves)
  • 1 tbsp oil, neutral
  • salt and pepper
  • 1 dashes lemon juice

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Cook the peas in salted water according to the package instructions and transfer them to a tall container with a slotted spoon. Wash the mint leaves, tear them into small pieces, and add them to the peas. Puree with a hand blender and season with salt and pepper. Fry the salmon, skin-side down, in hot oil for about 8 minutes. Season with salt and pepper and turn. Peel off the skin. Fry briefly on the other side, then arrange the fish on top of the pea puree. Drizzle with lemon juice to taste. This dish is suitable as a small meal for one or as an appetizer for two.
