Salmon sauce with feta and cocktail tomatoes

Ingredients for 2 servings:

  • 250 g salmon fillet(s), possibly frozen
  • 2 shallots or small onions
  • 1 cup of crème fraîche (crème legere)
  • 50 g feta cheese
  • 10 cocktail tomatoes, quartered
  • basil
  • possibly lemon juice
  • salt and pepper
  • oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Thaw the salmon fillet, if necessary, then season with salt, pepper, and perhaps a little lemon juice. Heat a little oil in a pan and fry the salmon. Finely chop the onions and add them. When the salmon is almost cooked, add the quartered tomatoes and the crème fraîche. Also, add the crumbled cheese. Let stand a little, then season well with salt and pepper. Serve on a plate and sprinkle with basil. Serve with pasta or rice.
