Salmon with Avocado
The perfect salmon with avocado recipe with a picture and simple step-by-step instructions.
- 2 Avocados
- Juice of 1 lime
- 1 Red pepper
- 1 Tomato
- 1 Onion
- 0,5 pot Flat leaf parsley
- 100 ml Wine vinegar
- Salt pepper
- 1 tsp Sugar
- 100 ml + 2 tbsp Öl
- 4 Salmon fillets á approx. 100 g
- Halve the avocados, remove the stones. Peel the pulp, cut into wedges and drizzle with juice. Dice peppers and tomatoes. Dice the onion. Pluck parsley leaves, chop.
- Mix vinegar, salt, pepper, sugar and parsley. Stir in 100 ml of oil. Mix the avocados, peppers, tomatoes and vinaigrette together.
- Heat 2 tablespoons of oil in a pan. Fry the salmon fillets on each side for about 3 minutes. Season with salt and pepper. Arrange the salmon fillets and avocado salad on plates.
