Salmon with Avocado

The perfect salmon with avocado recipe with a picture and simple step-by-step instructions.

  • 2 Avocados
  • Juice of 1 lime
  • 1 Red pepper
  • 1 Tomato
  • 1 Onion
  • 0,5 pot Flat leaf parsley
  • 100 ml Wine vinegar
  • Salt pepper
  • 1 tsp Sugar
  • 100 ml + 2 tbsp Öl
  • 4 Salmon fillets á approx. 100 g
  1. Halve the avocados, remove the stones. Peel the pulp, cut into wedges and drizzle with juice. Dice peppers and tomatoes. Dice the onion. Pluck parsley leaves, chop.
  2. Mix vinegar, salt, pepper, sugar and parsley. Stir in 100 ml of oil. Mix the avocados, peppers, tomatoes and vinaigrette together.
  3. Heat 2 tablespoons of oil in a pan. Fry the salmon fillets on each side for about 3 minutes. Season with salt and pepper. Arrange the salmon fillets and avocado salad on plates.
