Saltimbocca with sage spaghetti

Ingredients for 2 servings:

  • 4 minute steak(s)
  • 250g spaghetti
  • 4 tbsp butter
  • 15 sage leaves
  • 4 slices of raw ham
  • some salt and pepper
  • some fresh sage for decoration

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Roughly chop 11 sage leaves and set 4 large leaves aside for now. Season the minute steaks with pepper and a very little salt, then place a slice of ham and a sage leaf on each steak and secure with a toothpick. Then gently fry the steaks in 1 tablespoon of butter in a large pan over medium heat so that they remain moist and the sage does not burn. In a second, small pan, slowly heat the remaining 3 tablespoons of butter and sauté the chopped sage for a few minutes until crispy. Cook the spaghetti in plenty of salted water according to the package instructions. Then arrange the drained spaghetti on plates, pour the sage butter over it, and serve with the steaks. Grind the pepper over the steaks, garnish with some fresh sage, and serve immediately while hot.
