Ingredients for 4 servings:
- 6 egg whites
- 3 egg yolks
- 60 g sugar
- 20 g flour
- 1 packet of vanilla sugar
- Lemon(s) – zest, grated
- Butter for the mold
- Powdered sugar for sprinkling

Beat the egg whites and sugar until stiff. Mix the egg yolks with the vanilla sugar and carefully fold them into the mixture along with the lemon zest. Sift the flour over the mixture and fold it in. Melt the butter in an ovenproof dish and toss to coat. Using a pastry scraper, shape the dough into three pyramid-shaped dumplings and carefully place them in the dish. Bake the dumplings in a preheated oven at 200°C for about 8-10 minutes until light brown and slightly creamy on the inside. Do not expose them to drafts and do not place them roughly on the table, otherwise they will collapse. Sprinkle with powdered sugar (the mountains visible from Salzburg are usually covered in snow and are represented by this). Serve the dumplings immediately and distribute them around the table. Serve with compote or fruit sauce. For an extra touch of style, decorate the cold plates with fruit sauce and fruit beforehand.
