Ingredients for 12 servings:

  • 150 g powdered sugar
  • 170 g Flour, smooth
  • 1 pinch of baking powder
  • 125 ml water, hot (a little less)
  • 5 eggs

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Line a baking sheet with a sheet of greased parchment paper. Separate the eggs and beat the egg whites until stiff peaks form. Beat the egg yolks and sugar until frothy, then slowly add the water. Then add the flour and baking powder and mix thoroughly. Fold the egg whites into the mixture and spread the batter evenly on the baking sheet. Bake at 250°C (top and bottom heat) until the batter is a lovely dark yellow (you may need to do a pin test). Remove from the oven, turn out onto a clean tea towel, spread with jam, and carefully roll into a log (while the dough is still warm).
