Ingredients for 1 servings:
- 260 g flour
- 2 ½ tsp baking powder
- ½ tsp Baking soda (or just baking powder, then a total of 3 tsp)
- 100 g desiccated coconut
- 2 m.-sized eggs
- 140 g sugar, brown
- 80 ml oil
- 250 ml milk
- 2 dashes of rum flavoring
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Preheat the oven to 190°C. In a large bowl, combine the flour, baking powder, baking soda, and desiccated coconut. In a second bowl, whisk together the eggs, sugar, oil, milk, and rum flavoring. Pour the egg-milk mixture into the flour mixture and stir gently but thoroughly a few times with a large wooden spoon. Lumps are intentional! Spoon the batter into greased and breadcrumb-lined muffin tins and place a dollop of Nutella into the center of each muffin using two teaspoons. Place the tin in the oven, reduce the temperature to 180°C, and bake the muffins for 20-25 minutes. Let them cool briefly, then remove from the tin and let them cool completely on a wire rack.
