Sandwich "El Gaucho"

Ingredients for 1 servings:

  • 2 slices of toast
  • 2 eggs, size M
  • 2 slices of bacon
  • 2 tbsp Jalapeño(s), pickled, sliced
  • 2 tbsp BBQ sauce (preferably homemade)
  • some water
  • Salt and pepper, freshly ground black
  • 1 tbsp oil, neutral (e.g. rapeseed oil)

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 10 minutes

The ultimate sandwich after a night of partying, but also works well for pre-partying, best with a Desperados

Whisk the eggs with a little water, salt, and pepper, and toast the bread slices until medium-rare. Add the bacon to the still-cold pan, set the stove over medium heat, and fry the bacon slices until crispy, then drain on kitchen paper. Whisk the eggs. Add the oil to the bacon fat in the pan and stir in the scrambled eggs until set. Top one slice of toast with the scrambled eggs, spread BBQ sauce on top, add the bacon and jalapeños, and cover with the second slice of toast. Cut diagonally into two pieces and serve immediately. Serve with a small bowl of BBQ sauce for further dipping. A Desperados goes wonderfully with this while prepping, but after a night of partying, a strong, black coffee is better.
