Sardine tartare

Ingredients for 2 servings:

  • 1 can sardines, pickled in oil
  • 1 m.-sized onion(s)
  • 1 tsp lemon juice (alternatively diluted citric acid)
  • Maggi to taste
  • some black pepper from the mill

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Open the can of sardines in oil and drain most of the oil. Place the sardine fillets in a bowl. Dice the medium-sized onion into fairly fine cubes and stir into the sardine fillets with a fork. Season to taste with lemon juice or diluted citric acid, freshly ground black pepper, and, if desired, Maggi. Mash everything with a fork until you have a tartare sauce. This goes best with a fresh white roll or toast. Note: This also works with pickled mackerel fillets. However, you should definitely use sardines or mackerel fillets that have been pickled in oil, because unfortunately, the low-calorie preparation “in its own juice” (i.e., nothing more than water and salt) also loses the flavor, as the fish simply leaches out its flavor.
