Ingredients for 1 servings:

  • 100 g leek
  • 100 g feta cheese
  • 1 small onion(s)
  • 50 g tomatoes, dried
  • 130 g flour
  • 120 g oat flakes
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ⅛ tsp black pepper
  • 125 g cheese (Emmental), grated
  • 1 egg(s)
  • 60 ml oil
  • 350 g buttermilk
  • n. B. Grated cheese, for sprinkling
  • Grease for the tray

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

vegetarian – enough for about 12 pieces

Preheat the oven to 180°C. Grease a muffin tin. Trim the leek and slice it into thin rings. Dice the feta cheese. Peel the onion and dice it, along with the sun-dried tomatoes. Put the flour in a bowl. Add the oats, baking soda, baking powder, salt, pepper, onion, feta, leek, and tomatoes and mix everything together. In another bowl, lightly beat the egg with a fork. Add the oil and buttermilk and mix everything well. Then add the flour mixture and fold it in. Pour the batter evenly into the muffin tin and sprinkle with the grated cheese. Place in the preheated oven and bake for 20-25 minutes.
